Ingredients:
1 bag Asian salad mix
3 green onions
½ roasted chicken (about 2 cups, chopped or shredded). You can also buy a rotisserie chicken.
Optional: 1 small can of Mandarin oranges, drained
¼ cup sliced almonds
¼ cup sunflower seeds
Dressing ingredients:
1⁄3 cup rice wine vinegar
1½ teaspoons sesame oil
3 Tablespoons soy sauce
1 teaspoon minced garlic
1 teaspoon minced ginger
2 Tablespoons canola oil
2 Tablespoons brown sugar
1 teaspoon chili-garlic sauce or chili sauce
(If you do not want to make your own dressing, simply use your favorite bottle of Asian dressing.)
Recipe directions:
In a large bowl, combine Asian salad mix, green onions, chicken and oranges (if using).
In a separate bowl, whisk together vinegar, sesame oil, soy sauce, garlic, ginger, oil, brown sugar and chili sauce. Pour dressing over salad, put in the almonds and sunflower seeds and toss to combine.
