Cookies and Cream Bites

1 package (1 pound, 2 ounces) chocolate sandwich cookies
8 ounces cream cheese, room temperature
14 ounces chocolate candy coating
Line a rimmed baking sheet with parchment paper. Crush the cookies until fine using a food processor. Cut the cream cheese into six small pieces and add to the crushed cookies. Process the mixture until no streaks of white cream cheese can be seen. Transfer to a bowl and chill for about 45 minutes. After the mixture is chilled, make small balls using a cookie dough scoop and arrange 1 inch apart on the prepared sheet. Place back into the refrigerator for 10 to 15 more minutes. Melt the chocolate in a double boiler or in the microwave according to the package directions. Using a skewer, drop the bites into the chocolate one at a time and place back on the parchment-lined sheet. Allow to cool in the refrigerator until ready to serve. Store in an airtight container in the refrigerator. Makes 30 bites.
