Gloria’s Hot Potato Salad
From Houston Junior League Cookbook
6 slices bacon
6 potatoes
¼ cup bacon drippings
1½ teaspoons flour
1 cup cold water
⅓ cup white vinegar
1 Tablespoon sugar
1 teaspoon prepared mustard
1½ teaspoons salt
Pepper
2 ribs celery, chopped
2 small onions, chopped
Fresh parsley, finely chopped
Sliced radishes for garnish
Fry bacon crisp and crumble. Boil, peel and dice potatoes. Blend bacon drippings and flour in skillet. Stir in water. Add vinegar, sugar, mustard, salt and pepper. Bring to a boil, stirring constantly. Add celery, onions, parsley, potatoes and bacon. Toss and garnish with sliced radishes if desired. Serves 6-8.
