Ingredients:
1 cup (dry) oatmeal (I use old fashion oats)
2/3 cup toasted coconut flakes
½ cup peanut butter
½ cup ground flax seed
½ cup chocolate chips (optional)
1/3 cup honey or agave nectar
1 Tablespoon chia seeds (optional)
1 teaspoon vanilla extract
Recipe directions:
Stir all ingredients together until mixed well. Cover and put in the refrigerator for 30 minutes.
Once chilled, roll into balls of desired size, about 1 inch. Spread out on a cookie sheet. Continue to keep refrigerated for 30 more minutes. Store in an air-tight container for up to one week. Makes 24 1-inch balls.
