Meredith Vela’s Sugar Cookie Icing Recipe
1 cup powdered sugar (sifted)
2 teaspoons milk
2 teaspoons light corn syrup/Karo makes it shinier and sweeter
¼ teaspoon vanilla extract
Food coloring (Meredith uses concentrated food coloring from the baking supply store)
Stir the sifted powdered sugar and the milk until smooth. Beat in corn syrup and vanilla until icing is smooth and glossy. Add a little milk until it is the right consistency.
Meredith says she doesn’t really measure anymore; she stirs and adds until it seems right. (Her kids are usually her tasters.)
For decorating she has had better luck using the refillable icing squeeze bottles than the pastry bags.
