Pizza Wrap
Karina Arnold used this “super lazy vegan snack ideas” video as inspiration for this pizza wrap.
1 tortilla
½ cup shredded or grated cheese
½ tomato thinly sliced
1 handful of spinach
¼ cup chickpeas
1 tsp. basil
2 Tbsp. marinara sauce (or pizza / pasta sauce)
Over an un-greased, non-stick pan, warm each side of the tortilla for 30 seconds over medium heat. This makes the tortilla easier to fold. Sprinkle cheese evenly over tortilla, but not too close to the edges. Add spinach, tomato, chickpeas and basil in tortilla. Then, top with marinara sauce globs in the middle. Lay tortilla or open-faced pizza on pan and let toast about 2 minutes or until cheese is melted and edges are crispy. Then, remove from heat, fold in half like a taco and enjoy!
