Pumpkin Hummus
Ingredients:
1 15-ounce can pureed pumpkin
¾ cup tahini
2 cloves garlic, peeled and chopped
½ cup parsley, chopped
1 tablespoon ground cumin
2 tablespoons olive oil
Juice of 2 lemons
Salt and pepper to taste
Recipe directions:
Pulse all the ingredients together in a food processor. Top with roasted pumpkin seeds and a sprinkle of chopped parsley. Serve with pita chips or raw veggies like carrots, celery or jicama.
