Sheet Pan Sausage, Peppers, and Potatoes
The prep for this Sheet Pan Sausage, Peppers, and Potatoes takes just five minutes and, since all of the ingredients are tossed directly on an aluminum foil-lined sheet pan, this easy dinner requires no clean-up.
2 red, yellow, or orange bell peppers, sliced thick
½ yellow onion, chopped in large chunks
½ pound small, red-skinned potatoes, cut in half
½ teaspoon dried basil
½ teaspoon dried oregano
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
4 links mild Italian sausage (use your favorite – pork, turkey, or chicken)
Preheat the oven to 400 degrees and put the oven rack in its highest spot. Line a sheet pan with aluminum foil. Place the bell peppers, onion, and potatoes on the sheet pan, and toss with the basil, oregano, olive oil, salt, and pepper. Spread the vegetables in a single layer on the sheet pan. Place the sausages in between the vegetables. Bake for 30 to 35 minutes until everything begins to brown, stirring the vegetables and rotating the sausages half-way through.
