2 cups whole-wheat flour
1⁄8 cup ground flaxseed
4 teaspoons baking powder
½ teaspoon sea salt
2 teaspoons sugar
½ cup grass-fed butter, melted
2 eggs, separated
2 cups milk
Almond butter (optional)
Maple syrup (optional)

Homemade Whipped Cream:
1 cup whipping cream, cold
2 Tablespoons sugar
½ teaspoon vanilla
Recipe directions:
Sift together flour, flaxseed, baking powder, salt and sugar. Melt butter and set aside to cool. Beat egg whites until stiff and set aside. Mix together egg yolks and milk. Add egg mixture into dry ingredients. Add melted butter and mix until smooth. Fold in beaten egg whites. Cook according to preference in waffle maker. Eat plain or top with almond butter or maple syrup. We serve it with homemade whipped cream and fresh fruit for birthdays. Makes about 3 large Belgian waffles. I double this and freeze the extras to pop in the toaster on weekday mornings.
Homemade Whipped Cream:
Mix whipping cream, sugar and vanilla into a cold bowl. Whisk on high speed until soft to medium peaks form, about 1 minute.
