Sugar and Spice and Everything Nice Loaf Bread

From Peace Meals

Ingredients: 

1½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground ginger
⅛ teaspoon ground allspice
½ cup sugar
¼ cup molasses
1 egg
¼ cup buttermilk
¼ cup freshly squeezed orange juice
¼ cup vegetable oil
1 Tablespoon finely grated orange zest
½ teaspoon pure vanilla extract
15 ounces canned crushed pineapple, drained
¾ cup peeled and finely grated carrots
½ cup golden raisins
½ cup chopped walnuts, toasted

Recipe directions: 

Preheat the oven to 375 F. Spray a 9-by-5-inch loaf pan with cooking spray. Sift together the flour, baking powder, baking soda, salt, spices and sugar into a large bowl. In a medium bowl, whisk together the molasses, egg, buttermilk, orange juice, oil, zest and vanilla; stir in the pineapple. Pour the liquid mixture into the flour mixture and stir until just combined. Fold in the carrots, raisins and walnuts. Pour the batter into the prepared pan; bake for 55 minutes to 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean. Cool the bread in the pan for 5 minutes, then remove from the pan and let cool completely on a wire rack. Slice with a serrated knife. Makes 1 loaf.
