Sweet and Sour Braised Red Cabbage
From Stop and Smell the Rosemary
Ingredients:
½ cup raspberry or red wine vinegar
3 Tablespoons dark brown sugar, firmly packed
1 cup chicken stock
1 teaspoon caraway seeds
1 large head red cabbage, cored and shredded
Salt
Freshly ground pepper
Recipe directions:
Combine vinegar, sugar, stock, caraway seeds and cabbage in a large saucepan. Season with salt and pepper. Bring to a boil. Cover and simmer, stirring occasionally, 50 minutes. Uncover and boil until liquid has evaporated. Serves 4.
