Sweet Buns Burger
Karina Arnold found a perfectly round sweet potato at the grocery store. She thought that while her dad was grilling for the family, she could make her vegetarian version using her black bean patty and that would fit perfectly between slices of the spherical sweet potato.
1 sweet potato
1 burger patty (Karina used a black bean burger)
1 slice of cheese (Karina used Colby jack)
Burger toppings of choice (Karina used spinach, red onion, pickles, ketchup and mustard, and black pepper)
Bake your sweet potato in the oven. Make sure not to overbake or you will have “soggy buns,” resulting in an unsupportive potato for your patty. While potato is baking, grill your patty and wash, chop and prep your toppings. When potato is done, slice along middle, length-wise. Let cool. Then on one slice add cheese and let melt slightly. Layer patty, toppings and dressings then other “bun.” Enjoy!
