Vegan Quinoa Taco Bowl
¼ cup dried quinoa or brown rice
2 cups spinach
1/3 cup black beans
½ cup diced bell peppers
¼ cup diced red onion
½ avocado
2 Tbsp. lemon juice
2 tsp. avocado oil
Basil, pepper and salt to taste
Prepare brown rice or quinoa according to the instructions. After quinoa/rice is made, add basil and pepper and fluff with a fork. Set aside and let cool to room temperature. Pour olive oil in a separate pan and turn stove to medium heat. Sauté black beans, then onions and peppers in oil. Season with salt. Once peppers brown slightly, Place in bowl with spinach, quinoa, and avocado. Drizzle with lemon juice and mix with pepper and salt. Enjoy!
