It seems simple enough – fried, moist chicken with skin so brown and enduringly crisp. Yet many chefs don’t get it right, and even fewer are able to take it to the next level. The exception is two-time James Beard winner Bradley Ogden. The Las Vegas superstar chef and son Bryan recently opened the Funky Chicken – the first of many, they hope. We couldn’t be happier that they’re testing their recipes on Houstonians. The Ogdens have perfected the art of fried chicken with a savory coating reminiscent of the paper-thin, amber-glass crust on a crème brûlée. The barely-there breading allows you to taste crispy skin along with the expertly marinated organic chicken. Funky Chicken also serves roasted chicken and gourmet sides like quinoa salad and roasted brussels sprouts.
