Hummus and Cucumber Sandwich
After finishing a particularly grueling morning run, Karina Arnold was called into work to pick up a shift. She did not have much time or food because she was planning on going grocery shopping that evening. So, Karina whipped up this simple sandwich, which filled and fueled her until she could go to the store.
2 bread slices or 1 whole wheat wrap
2 tablespoons hummus
½ cucumber
Deli turkey (optional, if you want to add meat to your sandwich)
Ground pepper to taste
If time permits, toast bread or wrap until desired. Spread hummus and top with sliced cucumber. Ground pepper and deli meat are great additions to this sandwich.
