Quinoa Curry Bowl
2 cups leafy greens
1 cup steamed vegetables, cooled
½ cup cooked quinoa
1 oz. salt and pepper pistachios, shelled
1 oz. golden raisins
1 oz. crumbled feta
1 Tbsp. curry powder
2 tsp. olive oil
2 Tbsp. lemon juice and 1 Tbsp. Balsamic vinaigrette or juice from ½ a lemon
Salt and pepper to taste
Sauté cooked quinoa and golden raisins in olive oil in a pan over medium heat. To the quinoa, add curry powder. When raisins are slightly browned, remove quinoa and raisins from heat and add to a bowl. Toss with leafy greens, steamed vegetables, pistachios and crumbled feta. Drizzle with lemon juice and balsamic dressing. Enjoy!
