Artichoke Fritter

EASY-TO-MAKE APPETIZER This Artichoke Fritter recipe uses canned artichokes and can be prepared in less than 30 minutes for Artichoke Hearts Day on March 16. (Photo courtesy of The Junior League of Houston)

From The Star of Texas Cookbook

Ingredients: 

2 cans (8.5 oz each) artichoke hearts
1 egg
½ cup milk
½ cup Bisquick
¼ cup flour
1½ teaspoons double-acting baking powder
1 teaspoon salt
½ teaspoon garlic powder
¼ cup finely chopped onion
1 Tablespoon chopped parsley
Oil for frying

Recipe directions: 

Drain artichokes, cut into quarters, and set aside. Combine egg and milk. Stir in dry ingredients, onion, and parsley. Dip artichokes in batter. Fry in at least 2 inches of oil at 350 degrees for six to eight minutes each. Drain on paper towels. Sprinkle with extra salt and serve. Yields 32 fritters.
