Sautéed Berry Toast
½ cup assortment of berries (blueberries, raspberries, blackberries, sliced strawberries)
1 ½ Tablespoons of coconut oil
1 slice of bread (Karina recommends cinnamon raisin Ezekiel bread for this recipe)
1 large egg
Cinnamon to garnish
Sauté berries with 1 Tablespoon of coconut oil. Place infused berry coconut oil to the side for later. Cut a square out of the middle of bread and toss middle and keep the frame of bread. Put the frame of the bread with ½ Tablespoon of coconut oil in a pan over a hot stove. Crack open egg in the middle of your bread frame on the pan. Sprinkle cinnamon on top and, once the egg has set, flip over and continue cooking. Once egg is fully cooked, remove from pan and spread berry coconut oil combination on top. Then, dig in!
