Tuna Toast

Tuna saladKarina Arnold loves tuna salad but is not a fan of mayo. She substituted the mayo for a healthier and less sugary fat (avocado) and made a quick post-workout lunch.

Ingredients: 

2 slices sourdough bread
1 packet chunk-light plain tuna
½ an avocado
2 Tbsp. diced red onion
2 Tbsp. diced red tomato
1 Tbsp. lemon juice
1 Tbsp. chopped fresh cilantro
Salt and pepper to taste

Recipe directions: 

Toast bread and place on plate. In a separate bowl, mash avocado, tuna, lemon juice, red onion, salt and pepper until ingredients are evenly distributed. Evenly spread tuna salad on each slice, then top with tomato and cilantro.
