Turkey Wrap

Turkey wrap

This turkey wrap is a healthy, easy grab-and-go lunch option. (Photo: Karina Arnold)

Karina Arnold came up with this recipe during her freshman year of college at the University of Oklahoma. She typically eats this wrap with a small salad on the side.

Ingredients:

1 whole wheat tortilla
1-2 slices of deli turkey meat
1 slice of Swiss cheese (or any cheese of choice)
½ ripe avocado

Optional:
¼ cucumber, sliced
4 cherry tomatoes, cut in halves
Ground pepper to taste
1 toothpick

Recipe directions:

Place tortilla on flat surface. Cut and scoop and spread half an avocado (or however much avocado you want) on one side of the tortilla. Try not to spread the avocado too close to the edges. Lay the slices of deli meat over the spread along with your cheese of choice. Optionally, include cucumber slices in the middle to add a crunch. Tip: Cut the cucumbers into strips rather than round circles to allow you to fold the wrap more easily. Place some cherry tomatoes with the cucumber and a pinch of ground pepper to give the wrap a sweeter taste. Lastly, roll up your tortilla, stick a toothpick in, and enjoy! Keep refrigerated when storing.
