Cooking with Karina: Egg-cellent Dishes

Eggs are the blue jeans of food. Like your favorite pair of jeans, eggs go with everything and can be used any time of day. You can poach, scramble, bake and fry eggs. Eggs taste delicious mixed with vegetables, baked in an avocado or even wedged between slices of bread.
In addition to versatility, the love of eggs extends to all cultures. Traditional Hispanic breakfast tacos with onions, pepper and hot sauce are a family favorite. In addition, eggs are the foundation to the classic American breakfast of eggs, sausage and grits. Add another beloved American dish into your morning routine with eggs. Convert the traditional American hot dog by trying this Scrambled Hot-Dog.
Unlike your favorite blue jeans, however, eggs have great nutritional value and taste amazing (please don’t eat your jeans). Eggs help cholesterol, are high in vitamin A and a great way to get protein. I love prepping hard- boiled eggs to chop up in salads or place on top of avocado toast for a quick breakfast. I also suggest prepping these Frittata Muffins before a hectic week. They are easy to reheat and pack when you are short on time.
I know my Toast All Ways, All Day article inspired you to experiment with some toast-ally awesome toast toppings, right? It inspired me to make this Italiano Classico Toast with a roasted garlic tomato sauce, warm spinach and crumbled feta. Similar to my Sautéed Berry Toast, this toast features eggs and tasty toppings.
