Roasted Carrots
Karina Arnold said her favorite chef and inspiration, Erin Gleeson, posted a picture of her roasted Thanksgiving carrot dish on Instagram. Karina liked Erin’s Mediterranean take on a typical American side dish. After using the picture as guidance, Karina created this recipe.
5 large carrots, washed and peeled
3 Tbsp. Za’atar spice or Karina’s Homemade Za’atar
1 Tbsp. Olive oil
To Garnish:
Sesame seeds or hemp, flax seeds
Plain Greek yogurt
Fresh chopped cilantro
Preheat oven to 400 degrees F. Wash and peel whole carrots. Place in glass dish, then drizzle with olive oil and coat evenly with spice. Bake for about 20-25 minutes or until carrots are fully cooked. Let cool in oven for 2-3 minutes, then top with plain Greek yogurt, chopped cilantro and seeds.
