Cauliflower Mash

Cauliflower Mash

This mash tastes great with salmon and asparagus or chicken and veggies. 

Ingredients: 

3 cups chopped cauliflower (stems trimmed)
3 Tbsp. butter
1 Tbsp. salt
1 Tbsp. garlic powder
1 Tbsp. black pepper
Parsley or chives to garnish

Recipe directions: 

Steam 3 cups of cauliflower and add only a ½ Tbsp. salt, garlic powder and black pepper to water before you steam to flavor the cauliflower. Set the seasonings’ other ½ Tbsp. aside and steam cauliflower until you can easily pierce with a fork.

Transfer to a food processor or blender. Add butter, and the rest of the salt, garlic powder and black pepper. Chop until creamy, but do not over-blend or cauliflower mash will be too runny. 

Garnish with herbs and enjoy!

Note: Do not store in refrigerator over three days or mash begins to lose its flavor.
